Some big benefits:

- you can use a seperate IP for every server (service) on the same machine
WITHOUT LETTING THE OUTSIDE WORLD SEE THEY ARE ON ONE
MACHINE

- after some time, if you decide to give a certain server (service) a dedicated
machine, it requeres little to no DNS config changes. Users will not need
to change settings, you do not need to alter DNS...

- letting webservers use a seperate IP for a site (even if Virtual MultiHoming
works great (e.g. FireSite VDM), older browsers like a seperate IP for a
site/domain )...

If the soft supports it, it can be done (they both listen to a certain
portnumber (25?)
for calls on "their " IP.)

I don't think you need an extra config on the router for multiple IP's on
one machine...
Traffic for your subnet just has to be routed to the correct place....

Just my thoughts...
