You can simply change the MX records for each domain to point to the
unified server.

There are two rules to keep in mind when setting up a mail server's DNS
records.

1) It is illegal for the MX record to point to a name that doesn't have an
A record. This is also true of NS records, by the way.

2) Some mail servers, in an attempt to combat spam, will try to confirm a
mail server's name and address by looking for a PTR record for the address.
If the resulting name doesn't match the name in the MX record, they won't
receive mail from that server. Therefore, for best results, there should be
three records associated with a mail server (not necessarily in the same
file):

domain.name. MX priority# mailhost.name.
mailhost.name. A mailhost.address
mailhost.address PTR mailhost.name.
