domain transfer = lost mail?

Aloha..

Having just switched gabbardhawaii.com over to my server, my client is
worried because mail is not getting to her.

Is there a gap in mail service I should be aware of when switching clients
over to my server? Her virtual domain web site is accessible.

I thought her old server company would field the emails as usual until
things kicked in at InterNIC, at which point my mail server would take over.
I've setup EIMS and everything else just as I do with other virtual domains.
