With most mail servers, unless you give it a specific name to use, it will use the name from the reverse lookup on the address. Since I'm not a user of WebSTAR Mail, I can't tell you where to configure a different name.
In your case, since you have your own version of your reverse zone configured on your server, a reverse lookup on the address gets "www.imagetrends.com".
BTW: Your reverse zone isn't delegated to your server, so your reverse records aren't seen by others. You should discuss this with your provider, who has this to say about the address in question:

94.225.207.in-addr.arpa. NS ns1.uswest.net.
