Open QuickDNS Pro Admin. Go to the Domain menu and choose Server Preferences. Click on the Logging tab. Change the setting to either Minimal or Off. Click OK. Quit and relaunch QuickDNS Pro Server.

To roll logs, a la WebSTAR, you can either manually move the log file out of the folder, then quit and relaunch the server, or you could write some sort of AppleScript to do the job, triggered with Cron or such like.

If nobody else has a log-rolling script to give you, I can probably knock one together.
