There are several issues to address here.

First of all, you should create one or more MX records for lists.websurfhawaii.com, like this:

lists.websurfhawaii.com. MX 10 lists.websurfhawaii.com.

Additional records, if any, would be for backup mail servers. The point of this is to increase the reliability of mail delivery to the listserv.

Secondly, given this record:
lists.vsh.org. CNAME lists.websurfhawaii.com.

lists.vsh.org gains the same MX record(s) as lists.websurfhawaii.com, automatically.

Thirdly, to address the question you asked: The user addressed it to <list>@lists.websurfhawaii.com. Your list software would have to change that - if your list makes use of a reply-to header, you could simply change that for the list in question to help train your users to use the proper mailhost name.
