Add an MX with a higher priority value than your main MX:
your.domain. MX 10 main-mx.your.domain.
your.domain. MX 20 backup-mx.your.domain.
You'll need to configure the back-up server to know that it's a back-up (i.e.
so that it knows to pass messages on to the main server when it's available).
Exactly how you do that depends on what mail server you're running, but it
should be fairly straightforward.
