Yes. Add a second MX record, resolving a second mail server. This new
MX record should have a higher priority number than the original,
since the MX record with the lowest priority number becomes the final
destination.

This will provide fault tolerance for your incoming mail. Unlike a
primary mail server, a backup mail server isn't configured to accept
mail for your domains. (Back in the days before relay restrictions, a
backup mail server didn't require any configuration at all.) Instead,
the backup mail server must be configured to relay for your domains,
but not try to act as an endpoint for your messages.
