68030, this should work OK.
You shouldn't need any additional software, aside from the OS (and,
if you're using System 7.1, you'll need to add either MacTCP or Open
Transport). You may need to add RAM, though, if it still has the
default 4 MB. The system can take up to 10 MB of RAM, so assuming
you're not planning to host hundreds or thousands of domains, this
should work OK.
Keep in mind, this is not going to be a particularly fast DNS server.
You probably will want to avoid sending recursive queries to it. As
an authoritative name server, though, it should perform acceptably.
