I'm not too good with docs at the best of times but the html docs supplied with QDNS 3.5 are terrible... ...having revisted the docs, I eventually found what I was looking for: ->Working with Servers->Quick DNS for MacOS X->Server Options->Transfer Restrictions. As I'm using Quick DNS on 9.x, I'd left the section "Quick DNS for MacOS X" well alone. As I say, I'm pretty useless with documentation and generally I find html style docs the worst - so take all this with a pinch of salt. Anyway, thank you for your patience Chris.
