Hello Eric,

The only thing I can see that's wrong in your description is the use
of the localhost address in the Network applet in System Preferences.
Since Mac OS X (including Server) assigns this address to the
loopback address, without asking you, you should not assign it to
some other address.

Let us know if you continue to have problems after fixing this.
