one IP = one PTR hostname

obviously, with one ip with many A records, you have to choose one hostname.

domain.com doesn't have to have a MX hostname of mail.domain.com. In fact,
You're complicating your life to do it that way. I recommend:

eachandeverydomain.com MX 10 mx1.ISPdomain.com.

This keeps your life simpler, and removes the PTR hostname quandry.

mx1.ISPdomain.com. A ip.ad.re.ss

should match:

ss.re.ad.ip.in-addr.arpa PTR mx1.ISPdomain.com.

btw, for each domain, create a group of mail-related hostnames, esp DON'T
give your clients mail.ISPdomain.com for all mail
functions. mail.domain.com has caused more problems than it's worth, so I
don't even use it:

smtp A ip.ad.re.ss ; authenticated outbound smtp mail
pop A ip.ad.re.ss ; pop mail
webmail A ip.ad.re.ss ; webmail
imap A ip.ad.re.ss ;
