Some email clients don't use fixed-width fonts. And there isn't a whole
lot you can do unless you change the settings on the clients side.
The invoices are identical as far as the text itself goes, just some
clients choose to display it with non fixed width fonts. {shrug}
Copy/paste an invoice into Word or something. Change the whole thing to
Times and then change it to Courier, you will see what happens to
identical text under a different font.
As for using tabs, it's impossible, as the tab character is an invalid
character in emails, and most email clients would show a tab as a single
space. Usually when you hit tab when writing an email, the mail program
substitutes a bunch of spaces before it sends the email so it sort of
*looks* like a tab, but it's not really.
