It has been our experience that Mac OS X is much more stable than Mac
OS 9. You can run services on your workstation machine and, unless
they're very busy, you'll probably never notice them when you're not
using them.

For example, my PowerBook runs the DNS server for my entire testing
lab. It also runs a minimum of 6 client-side applications at any
given time (sometimes as many as 15), plus the Jakarta Tomcat web
server (for the web interface version of QuickDNS Manager). Unlike
classic Mac OS, where you have to be careful about not holding down
the mouse button when you're running a service, let alone doing
anything else that might disrupt everything, I don't have to worry
about running buggy software and having it take down the DNS server.
Eudora, for example, crashes on me at least twice a week, but that
doesn't affect any other process - in fact, I can just restart it and
continue working, without rebooting.

I can't make an official recommendation. But unofficially, if I were
in your place, I would go with the iMac guts in the 1U enclosure,
running Mac OS X and both services. I don't have any experience with
any Mac OS X version of EIMS, but there are other Mac OS X mail
services that you can use. Postfix, for example.

Note that the XServe also uses ATA, rather than SCSI.
