Trying to understand multiple MX records...

Hello!

I'm a bit confused as to how ISP's setup multiple mail servers and when
one goes down, your clients email software knows to switch. How do you
do that?

I know that this is how I set it up


Priority 10 mail.otownhosting.com
Priority 20 mail2.otownhosting.com

So, I'd like "10" to be the primary mail server for pop/smtp. Then, "20"
kicks in if "10" is down. Am I correct in this? So, if an email client
is configured to connect to mail.otownhosting.com and it goes down, how
does it know to connect to mail2.otownhosting.com? And if it doesn't
connect, how does mail2 get the mail to the normal server when it goes
back up?

Any explanation would help me BIGTIME right now..I have to implement
this in a few hours.
