Which file are you referring to exactly that you see that in?

Unfortunately there isn't... there is a bug in QuickBooks that makes it
simply ignore the PAYMETH within the IIF file.

Things like SMTP server should not need to be changed per company (which is
why there is not a per company setting for it).
