The expiration date should not change (unless you prorate them). The
expiration date is the date they have paid for service up through.

I'm not sure what you mean about figuring out how much usage they used after
you overwrite it though. Can you clarify?

The preferences really depend on your setup. There is no "right or wrong"
way for everyone (otherwise there would be no preferences).
